Guardians make it impossible for you to anchor your ark.

I'm looking for a way of removing the guardians completely, I'm really surprised it's not an option, maybe it's anomaly's or curiosities?

Just don't play against Unfallen. Guardians don't exist until an Unfallen exploration ship probes a guardian anomaly. If there are no unfallen empires on the map there will never be any guardians.
