basically title, i find most of the hunter ships aesthetically unappealing and would much rather use coordinator ships(i only play against ai so im not too terribly worried about optimum damage) would it be possible to only use coord ships sprinkled with a corvette here and there or a carrier?

So long as it works, yes you can do it. Coordinators can still do the job as they can be tanky, but your firepower will need to come from elsewhere.

Yes but your limited to a few factions, that would be vaulters, lumeneris, eu, and vodyani, maybe unfallen. This is due to the lack of weapons slots however coordinators will compensate for the lack of damage with defensive capabilities and stacking bonus's. 

Its a tactic I have tried against players and been succesful enough to win doing it. They key you need is damage mitigation cards and advanced bombers plus flak. Do this you might be pleasantly surpized with the results. Battle cards like hard target and prudent prodentials apply here. If you own vaulters dlc this is also the best method to use boarding pods as well because each coordinator design has enough support for troops as well as defensive repair fleet accelerator and engines. Unfortunately the other coordinators empires lack the tactical strength to be of any use, the sophon upgraded coordinator being the bare minimum to even attempt this. However stacking intensifiers with all those support slots you may find yojr coordinators to hit very hard. Vodyani coordinators are probably one of the strongest ships in the game. Riftborn. Unfallen, and sophon do not quite make the cut, craver is also possible, but again vodyani first, then vaulter or UE and you will find success.
