More useful metrics then total food/industry/science produced would be what you used it for. In "Empire management > Victory screen" (F1) you can find total population count (primary usage for your food), improvements build (with industry) and technologies researched (with science):

You'll see that in the Economy Screen there's a list of every Luxury Resource you've discovered (the box is titled "Luxury Resources", if it has a line underneath it that means you are producing some of it, if you hover of that it should tell you.

If you want to see how much a planet is producing, you'll see that it lists that number underneath the FIDSI produced by the planet. In my example, I am producing 1 dustciduous trees.

If you wanna see how much your entire system is producing, you can check on the System info bar underneath the FIDSI output. In this situation, all my planets combined are outputting 2.
