When I start a new game I'm given ONLY 2 options, Beginner or Quick Game.  I have several DLC's only missing 1 or 2.  Mods downloaded from Steam workshop does not effect either way (choosing them or not choosing them).  How do I start a game that I want to setup (choose what faction, galaxy size, etc...?)
