I bought the game and started the beginner tutorial as I'm new to these types of games and had a great time achieving a domination victory. When I tried to load the game two days later, the only difficulty option it gave me was beginner still. I want to pick my own faction and face steeper challenges, so how do I unlock the other difficulties?

Start a new game.
You can't edit (w/o reverse engineering, I think).
How you started it with the beginner difficulty, and you will finish the game with it. As you started the game with a certain faction, so you finished it.
