As those are insta use resources that you can't stockpile, trading wouldn't seem to make much sense either. On the other hand you can already "trade" science in form of researched technology.

I mean for example that if industry isn't used then it's gone, wasted, only Dust and Influence can be saved over multiple turns, while you can still have industry as whatever you used it for, food as population or science as researced technology, it's still not the resource in it's purest form anymore.

edit1: as for industry and food, those also work on the system you produce them on (only exceptions I know of are: colonization and that special Hissho thing that sends part of it to home world)

trading ships directly would be nice but it's already possible to sell and buy ships at the market, structures on the other hand would seem a bit weird if not buying the whole system with it...

Why not make it similar to what has been done In Endless Legend, being able to create more food from industry, such as the infinite creation of dust or science we already have ?

Because industry is more valuable than food, the point is that you are able to ship food to systems that need it in order to get them minimally functional.
