I asked this in general but maybe its better asked here. Is it possible to create a custom solar system using mods to override a given races starting system? For example I want the UFP to have a yellow-star with 9 planets aka our solar system.

It's not possible to have that many planets. The GUI doesn't support over...5? I think, or 6.
