So, what are the benefits of having an Alliance over just Open Borders?

From what I've read, it only increases your points towards Diplomatic Victory. (And makes you ally like you even more?)

Since you can still declare war/peace independently after that, does that mean you're still diplomatically independent from your ally, and he can't force you to peace/war with another faction, right?

In terms of war, any faction that you go to war with, allies automatically go to war with as well. Or if you create a new alliance with someone who is at war, you automatically have war declared on you by their enemy.

I don't know if the same goes for peace, I've never been able to get another race to accept a cease fire/peace once I join an alliance...I just send out the fleets and take their systems.

Along with what Final said, when races make peace with your alliance, you also make peace with them automatically.

Yws, such as the Amoebas, who get +10% to the min and max damage values of their weapons per ally.

There are also some techs that increase benefits based on number of allies. They are in the left tree, near the end.

it would be nice if your alliance actually attacked or came to help defend you. In the games I've played I've had alliance and my allies didnt even attack when my systems were getting over run.

To be fair, most human players don't run off to the defense of their computer ally's worlds either.

Better to strike at the enemy instead and plunder some new worlds for your troubles. The ally makes perfect bait.

When in a alliance you will get more from your trade routes that link to you ally.

As Prophet mentioned in the left tree there are technologies that enable you to make an alliance and improve the benefits of having one, better trade, get approval bonus from each alliance that you have etc.
