First off, my apologies if this is asked (and answered) elsewhere. I couldn't find anything given the short time limit I have for searching forums extensively.

I would like to know how the game's scoring system is determined? What elements of the game are used to determine one's score? Is it FIDS, fleet, tech or some combination of them or everything?

That would have made more sense. It doesn't make sense that you 'have to' be a warmonger and so have a lot of ships to have a high score. Basing it off population, tech level, number of systems owned, total FIDS and many others would make more sense. It actually is a problem that in the odd case where you have to win by score you are forced to buy a lot of ships, even if you have no intention of using them. It also means you can slightly lower the AI's inclination towards aggression by not having a large fleet even if you are ahead in the meaningful factors like total FIDS which again is upside down (a weak military should invite aggression). Ships are only a means to an end rather than a goal in itself and so shouldn't count for much in score.

Your total score is the combination of several factors that can be seen when you press the ''quit game'' button. It is composed of everything you've done in the game, including research status, command points, military might, population and others.

I do not find it strange to have lots of points given by fleets. You can have a great number of systems, very populated, they won't help you against fleets of battlecruisers.

Its strange because you can win the game while being last in score. This is usually the case for me. I build zero ships until I get attacked. And you can go through a whole game without being attacked if you keep people happy.
