I have looked all over, but found nothing definitive on installing mods onto the steam for mac version of the game. Did I just miss it?

It is not any different than installing mods for Windows. Because of the unity engine, the same mod works on Mac and Windows, even ones which modify the game code such as a galaxy generator. Please see the "mod shopping mall" sticky thread in the modding subforum to find available mods.
