Does science do anything after finishing the tech tree? Last game I snowballed on science hard and ended up several ages past the AI. Since the AI couldn't mine the strategic resources I needed for the space race, and I didn't have the infrastructure to go to war to claim them, I had to twiddle my thumbs till the game ran out and I won on score.

On standard settings the game ends when someone completes the entire tech tree. That's what happened my first game.

Yep. 

completing the science tree is an automatic way to end the game for everyone.

You can only win by score, its the only factor that determines winner

There are several ways to end the game however, turn limit beign the standard, and researching techs is another, there a few others you can find in end condition settings

Generally though, when there's nothing to research, all science is lost. This happens when you finish the tech tree for the current era, which can happen faster than you might want when you've been strong in science, or even a science culture in the previous era and already researched some additional techs.
