I am playing with Egypt in the ancient era and I focused on building districts as it is a culture focused on construction. In the affinity description, it says that i gain +10 stability whenever i finish a district, but I'm just seeing my cities lose more and more stability as I build more districts. Am I doing something wrong?

The 10 stability from the builder affinity is only a temporary boost. It doesn't influence the longer stability equilibrium that gets lower by 10 for every district you build.

Stability decreases from:

Attaching territories

Building most types of districts

Some events

Stability increases from:
Building wonders

Building garrisons

Building commons quarter district

Certain religious tenets

Staying in/moving back toward the middle of your civic axes

Exploiting/importing any luxury resources

If you look at your stability it will have a value like 90% and a value like 75%, lets say 90% is your current Stability and 75% is the target stability, each turn you drop toward your target by 5 stability points. When Egypt builds a district you get +10 immediate stability meaning you are now at 100% but you get -10  on your target stability for each district so your 75% is now 65%/ You city l;ooks great at 100% stability but if will slowly drop tooward 65% if you stopped building districts
