There is of course the endless mode, but it says that its 600 turns maximum
Honestly that doesn't make any sense to me, endless isn't end less lmao
I love slow games, that make the late game insane
so I really need a way to make them last forever

Yes, you can play after victory (or the end turn) is achieved. The amount of turns just becomes an infinity symbol.

Yes, you have the option to choose continue game after the game is 'over'.

Isn't it obvious by default. Each game, Humankind, Civilization, whatever title comes to your mind is endless by default. Only the game winner is determined after a set of rounds (or other finish conditions).

You can play on after the "turn limit." There might be problems occurring though if you continue for a long time and snowball too extremely. Here's a screenshot from someone (not me, and I don't know whose it is) playing to turn 2002. The massive yields lead to a negative overflow (not that you could do anything with science in turn 2002 anyway). Just be warned that your game might still end at some point because of such unchecked masses of yields or bugs, and I guess fixing these things that can't appear during "normal" games is a very, very low priority.
