I notice that when engaged in battle the AI enemies can run all over the place but my own movement is entirely restricted. Are they able to ignore zone of control?

Another thing I noticed was when I won a war I was unable to offer the terms I wanted and was unable to keep the cities I had conquered. What happened?

I honestly don't know but I would'nt be surprised if the ai were allowed to ignore the zone, Amplitudes ai's have been notorious for using cheats as low as sandbox difficulty, The ai you fight on the easiest difficulty will be the same ai on the hardest difficulty, the only difference is that the harder ai get more bonuses and cheats than ai on easier difficulties.

Light cavalry units ignore zone of control - that is their strong part. These are Scout Riders and Horsemen from the generic units.

We need a better classification in game of unit roles and upgrade paths and possibly more light cavalry in later eras. Especially some hussars or ulans in the Early modern era.  :)

Regarding the peace deal you have a war sore depending on the war support you started the war with, any cities and territories that you have occupied and your current war support. You can demand all cities/territories that are included in your demands before the war started (you receive those automatically with no war score cost). You can also "buy in" any occupied territory or city. Usually your war score won't be enough to demand all your conquests. You can also ask for Vassalage if your war score is high enough.

Pretty sure heavy cavalry also ignore zone of control, as well as units such as hunnic/mongol hordes. Probably pretty much all mounted units no matter their class ignore zone of control and anti cavalry units recieve their bonus against them.

What you might have experienced is that ZoC can be overrided if there are friendly units along the path you want to go. For example, normally you could only step back one tile from an adjacent enemy unit, but if there is a friendly unit behind you, you can leapfrog behind him.
