Is there a way to play an older version/build in a standalone (non-steam) install?  

The most recent update (Dios De Los Muertos) made it so I can't load my saved game.

At this moment the only option to play an older version is through Steam: Property > Betas > Rollback version (which is the version before the current patch).
We leave that option for all the people that wanted to finish their current save, before moving to the next patch, otherwise they could encounter some bugs.

Unfortunately I don't have  steam version. :(
