You shouldn´t have 3 of them. Sounds to me like a bug so allow me to move the thread to the Bug Report section. And for the other part of the question, there is no way to delete de default Persona.
As is not inside the game, the team might ask you for the Diagnostic Files and Player Log (otherwise they will notify you).
Here is the guide on where to find them:

• Diagnostic files: These files need to be compressed as a zip or rar file or the upload will fail! Located by default: 
  • PC:\Users\[username]\Documents\Humankind\Temporary Files 
  • Mac: Select the correct file by looking at the name like "Diagnostics - 2020'10'11 @1407'46''" that gives you the date and hour which should correspond to a save file 
• Player.Log: These can be found here:
  • PC: This folder is hidden by default. You will need to reveal hidden folders (https://support.microsoft.com/en-us/windows/show-hidden-files-0320fe58-0117-fd59-6851-9b7f9840fdb2 ) then navigate to: Users\[username]\AppData\LocalLow\AMPLITUDE Studios\Humankind
  • Mac: This is hidden in the Libraries folder. You will need to do an internet search to find specific steps for your OS. Once the libraries folder is revealed, they are in user/library/logs/amplitude studios/humankind

Hey, could you let me know if you have suscribe to any persona on the G2G ?

I have 5 of them. Plus I have downloaded 50 Personas. None of the 50 show up. Only the 5 AI default, those that shipped with the game, plus the ones I got thru twitch drops. 

@Scar, your suggestion to delete the files has worked. I no longer have the AI Default personas listed. My next question, how can I use the personas I have downloaded from GTG. All the personas from the twich drops are there, but no way to use the 50 persona's that I have downloaded.

Did you linked your g2g account to the game? Thats the way you update your personas list from g2g to the game

Yes I have linked my gtg account. I have uploaded my persona as well. AFter using the Bolivar Beta, I had to download my uploaded persona, back into the game. But I still have no access to the 50 personas I have downloaded. Only those that shipped with the game, plus the ones I have earned from the Twitch Drops.

I just tried to refresh my personas in-game. I get the following message

I had logged in on the previous page. Was able to get my own persona back, plus download all the twitch drops. However, I do not see any of the personas that I have downloaded on GTG

So I think I finally figured out the issue. When I checked on this site, it said I had 50/50 Personas downloaded. When I deleted one it changed to 50/50. To be sure, I deleted another, it now says 49/50. When I loaded the game, they were all there. At some point I must have inadvertently downloaded 51 personas, and was causing the error.

Update. With the hotfix. my downloaded personas have again disappeared. When I refresh, I get the same error message as above.

Yes, but on the left, you can see I am logged into GTG. It says Disconnect from GTG, on the button. I can log out and back in, but get the same error message after it tries to download for a few seconds. Just after hotfix 1, it started to work, and all 50 personas were added. The next day when I went to play, they were gone again and got the same error message. After hotfix 2, it again worked for a day, then they disappeared the next day. They have not been available since. I try almost every day.

The issue is still here with the latest update. I deleted the files as stated above. I started the game and downloaded my persona back from GTG. But the Personas I have downloaded, are not there. I get the same error message as before.

The issue is still present. Sometimes the downloaded Personas are there, sometimes not. No rhyme or reason.
