Hey, I'm a controller fan. So, I was guessing if I could play it with all the controller GUI optimization from PC without the actual console. Maybe inside Xbox Game Pass?

As far as I know, there are currently no plans to port the console control and UI changes over to PC, sorry.

Your best option to do that would be to get the Xbox version of the game and play on PC via xCloud.
