I'm not sure if it's the easiest, but it's probably one of the longest...

I tend to play on huge, 8-armed spiral maps, so I don't as a rule win by conquest. There's just so much space to cover and planets to take that once I'm up to 40+ planets, it's usually faster just to finish researching the far right-hand tech and win.
