Yes, updating the Endless Mod is on our to-do list. I don't have an eta yet, though.

Not sure if I get your point with " can't pinpoint what element specifically performs this action ". On infraestructures that gives you food (as an example), you can mouse over to see how much food you will get based on the horses.
Perhaps that's not your point, so please do not hesitate to give me a bit more of details or adding any screenshoot.

I am not the best with the modds tools, but if not mistaken you can't have like new interfaces, but rather add the specifics of the current ones, meaning more descriptions, numbers etc.

Unfortunately the mod tools are only added to your library on steam if you have the game, sorry.

You can change it on Settings > Gameplay > Battle Animation Speed

It sound quite interesting mod. I really like that some Wonders have like a special effect with a specific culture.
